Description

A comforting baked casserole layering seasoned ground beef, rice, beans, cheese, and tortillas—capturing the flavors of burritos in an easy-to-serve family-style dish.


Ingredients

  • 1 lb (450 g) ground beef or turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet (1 oz/28 g) taco seasoning mix
  • 1 cup (200 g) cooked white or brown rice
  • 1 can (15 oz/425 g) black beans, drained and rinsed
  • 1 can (10 oz/283 g) diced tomatoes with green chilies (e.g., Rotel)
  • 68 small flour tortillas, cut or torn into strips
  • 2 cups (200 g) shredded cheddar or Mexican blend cheese
  • 1 cup (240 ml) salsa
  • Optional toppings: sour cream, chopped cilantro, sliced jalapeños, avocado

Instructions

  1. Preheat oven to 375 °F (190 °C). Lightly grease a 9×13‑inch baking dish.
  2. In a large skillet over medium heat, cook ground beef with diced onion until meat is browned and onion is soft, about 6–8 minutes; drain excess fat.
  3. Add minced garlic and taco seasoning; stir in cooked rice, black beans, and tomatoes with chilies. Simmer 2–3 minutes.
  4. Stir in half of the shredded cheese and half of the salsa until cheese is melted and mixture is well combined.
  5. Layer half of the tortilla strips in bottom of prepared dish. Spoon half of the meat-and-bean mixture over tortillas.
  6. Add another layer of tortilla strips and top with remaining meat mixture.
  7. Drizzle remaining salsa on top, then sprinkle with the remaining cheese.
  8. Bake uncovered for 20–25 minutes until bubbly and cheese is golden.
  9. Let rest 5 minutes before serving. Garnish with sour cream, cilantro, jalapeños, and/or avocado as desired.

Notes

  • Make it vegetarian by substituting meat with extra beans or cooked lentils.
  • Prep ahead: assemble casserole, cover, and refrigerate up to 24 hrs; bake before serving.
  • Spice level can be adjusted: use mild salsa and skip jalapeños for less heat.
