Description

Healthy Ranch Chicken Salad is a light yet satisfying dish made with shredded chicken, crisp vegetables, and a creamy Greek yogurt ranch dressing. Perfect for lunches, wraps, or a refreshing dinner.


Ingredients

  • 2 cups cooked, shredded chicken breast
  • 1/2 cup plain Greek yogurt
  • 2 tbsp light mayonnaise
  • 1 tbsp ranch seasoning mix
  • 1/2 tsp garlic powder
  • 1/2 cup chopped celery
  • 1/4 cup diced red onion
  • 1/2 cup chopped cucumber or bell pepper
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Fresh parsley or dill for garnish (optional)

Instructions

  1. In a medium bowl, whisk together Greek yogurt, mayonnaise, ranch seasoning, garlic powder, lemon juice, salt, and pepper.
  2. Add shredded chicken, celery, onion, and cucumber (or bell pepper). Stir until everything is evenly coated.
  3. Taste and adjust seasoning if needed.
  4. Chill for 20–30 minutes before serving to let flavors meld.
  5. Serve on whole grain bread, in lettuce wraps, or over a bed of greens. Garnish with fresh herbs if desired.

  • Use rotisserie chicken for convenience.
