- 2 cups cooked, shredded chicken breast
- 1/2 cup plain Greek yogurt
- 2 tbsp light mayonnaise
- 1 tbsp ranch seasoning mix
- 1/2 tsp garlic powder
- 1/2 cup chopped celery
- 1/4 cup diced red onion
- 1/2 cup chopped cucumber or bell pepper
- 1 tbsp lemon juice
- Salt and pepper to taste
- Fresh parsley or dill for garnish (optional)
Instructions
- In a medium bowl, whisk together Greek yogurt, mayonnaise, ranch seasoning, garlic powder, lemon juice, salt, and pepper.
- Add shredded chicken, celery, onion, and cucumber (or bell pepper). Stir until everything is evenly coated.
- Taste and adjust seasoning if needed.
- Chill for 20–30 minutes before serving to let flavors meld.
- Serve on whole grain bread, in lettuce wraps, or over a bed of greens. Garnish with fresh herbs if desired.
Notes
- Use rotisserie chicken for convenience.
- Store leftovers in an airtight container in the fridge for up to 3 days.
