- 1 tablespoon lemon juice
- Salt and pepper to taste

- Optional: 1/4 cup dried cranberries
Instructions
- In a large bowl, combine the shredded chicken, celery, red onion, and parsley.
- In a separate small bowl, whisk together the Greek yogurt, olive oil, Dijon mustard, and lemon juice.
- Pour the dressing over the chicken mixture and stir until well combined.
- Season with salt and pepper to taste.
- If using, fold in chopped nuts and dried cranberries.
- Refrigerate for at least 30 minutes before serving for best flavor.
