These fudgy brownies are made with black beans, providing a boost of protein and fiber. They’re naturally sweetened and free from refined sugars, making them a healthier alternative to traditional brownies

- 1 can (15 oz) black beans, drained and rinsed
- 3 tablespoons unsweetened cocoa powder
- 1/2 cup quick oats
- 1/4 teaspoon salt
- 1/3 cup pure maple syrup (or honey or agave)
- 1/4 cup coconut or vegetable oil
- 2 teaspoons pure vanilla extract
- 1/2 teaspoon baking powder
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
- In a food processor, combine the black beans, cocoa powder, oats, salt, maple syrup, oil, vanilla extract, and baking powder. Blend until completely smooth.
- If using, fold in the chocolate chips.
- Pour the batter into the prepared baking pan, spreading it evenly.
- Bake for 15-18 minutes, or until a toothpick inserted into the center comes out mostly clean.
- Allow the brownies to cool completely before cutting into squares.
Notes
- For a sweeter brownie, add an extra tablespoon of maple syrup.
- These brownies are best stored in the refrigerator and can also be frozen for longer storage.
