These Healthy Apple Cinnamon Breakfast Cookies are soft, chewy, and naturally sweetened with applesauce and a touch of maple syrup. Packed with oats, warm spices, and fresh apple chunks, they make a nutritious breakfast or snack you can feel good about eating any time of day!
Ingredients

1 1/2 cups old-fashioned rolled oats

1/2 cup whole wheat flour (or all-purpose flour)

1 tsp ground cinnamon

1/4 tsp nutmeg

1/2 tsp baking soda

1/4 tsp salt

1/2 cup unsweetened applesauce

1/3 cup pure maple syrup or honey

1 egg
-
2 tbsp melted coconut oil (or olive oil)

1 tsp vanilla extract

1 small apple, peeled and finely diced (about 3/4 cup)

Optional: 1/4 cup raisins or chopped nuts
Instructions

Preheat Oven:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. -
Mix Dry Ingredients:
In a large bowl, combine oats, flour, cinnamon, nutmeg, baking soda, and salt. -
Mix Wet Ingredients:
In another bowl, whisk together applesauce, maple syrup, egg, melted coconut oil, and vanilla extract. -
Combine & Fold:
Add the wet mixture into the dry ingredients and stir until just combined. Fold in diced apples and optional mix-ins. -
Scoop & Shape:
Scoop dough (about 2 tablespoons per cookie) onto the prepared baking sheet. Flatten slightly with your fingers or a spoon. -
Bake:
Bake for 12–15 minutes, or until cookies are set and lightly golden. Let cool on the pan for 5 minutes, then transfer to a wire rack.
