Description

These Healthy Apple Cinnamon Breakfast Cookies are soft, chewy, and naturally sweetened with applesauce and a touch of maple syrup. Packed with oats, warm spices, and fresh apple chunks, they make a nutritious breakfast or snack you can feel good about eating any time of day!


Ingredients

  • 1 1/2 cups old-fashioned rolled oats

  • 1/2 cup whole wheat flour (or all-purpose flour)

  • 1 tsp ground cinnamon

  • 1/4 tsp nutmeg

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup unsweetened applesauce

  • 1/3 cup pure maple syrup or honey

  • 1 egg

  • 2 tbsp melted coconut oil (or olive oil)

  • 1 tsp vanilla extract

  • 1 small apple, peeled and finely diced (about 3/4 cup)

  • Optional: 1/4 cup raisins or chopped nuts


Instructions

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. Mix Dry Ingredients:
    In a large bowl, combine oats, flour, cinnamon, nutmeg, baking soda, and salt.

  3. Mix Wet Ingredients:
    In another bowl, whisk together applesauce, maple syrup, egg, melted coconut oil, and vanilla extract.

  4. Combine & Fold:
    Add the wet mixture into the dry ingredients and stir until just combined. Fold in diced apples and optional mix-ins.

  5. Scoop & Shape:
    Scoop dough (about 2 tablespoons per cookie) onto the prepared baking sheet. Flatten slightly with your fingers or a spoon.

  6. Bake:
    Bake for 12–15 minutes, or until cookies are set and lightly golden. Let cool on the pan for 5 minutes, then transfer to a wire rack.


Notes

  • Store in an airtight container at room temp for 2–3 days or in the fridge for up to a week.

  • These cookies freeze well—perfect for batch baking!
