Description

Hawaiian Haystacks are a fun, customizable meal featuring a base of rice topped with creamy chicken sauce and a variety of fresh toppings like pineapple, tomatoes, cheese, and crispy chow mein noodles.


Ingredients

  • 2 cups cooked, shredded chicken
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • 1 tablespoon butter

  • 1 cup shredded cheddar cheese
  • 1 cup diced fresh pineapple
  • 1 cup diced tomatoes
  • 1/2 cup sliced green onions
  • 1/2 cup sliced black olives
  • 1/2 cup shredded coconut (optional)
  • 1 cup crispy chow mein noodles
  • 1/2 cup slivered almonds (optional)

Instructions

  1. In a medium saucepan, melt butter over medium heat. Stir in cream of chicken soup and chicken broth until smooth.
  2. Add shredded chicken and bring to a gentle simmer. Stir in sour cream and season with salt and pepper to taste. Keep warm.
