- 2 cups cooked, shredded chicken
- 1 can (10.5 ounces) cream of chicken soup

- 1 cup diced fresh pineapple
- 1 cup diced tomatoes

- 1 cup crispy chow mein noodles
- 1/2 cup slivered almonds (optional)
Instructions
- In a medium saucepan, melt butter over medium heat. Stir in cream of chicken soup and chicken broth until smooth.
- Add shredded chicken and bring to a gentle simmer. Stir in sour cream and season with salt and pepper to taste. Keep warm.
- To serve, place a scoop of rice on each plate. Top with the creamy chicken mixture.
- Add desired toppings such as pineapple, tomatoes, cheese, green onions, olives, coconut, almonds, and crispy chow mein noodles.
