For the Butterbeer Frosting:

  • 2 cups powdered sugar
  • 23 tbsp heavy cream or milk
  • 1/2 tsp vanilla extract
  • 1/2 tsp butter extract (optional)

  • Drizzle of caramel sauce
  • Additional butterscotch chips

Instructions

  1. Make the Cookie Dough:
    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
    • Beat in the egg, vanilla extract, and butter extract (if using) until combined.
    • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    • Fold in the butterscotch chips.
  2. Bake the Cookies:
    • Scoop tablespoon-sized balls of dough and place them on the prepared baking sheet about 2 inches apart.
    • Bake for 8-10 minutes, or until the edges are lightly golden. The centers may look slightly underdone but will firm up as they cool.
    • Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  3. Prepare the Butterbeer Frosting:
    • In a mixing bowl, beat the butter until creamy. Add the melted butterscotch chips and mix until smooth.
    • Gradually add the powdered sugar, alternating with heavy cream or milk, until the frosting reaches a spreadable consistency. Beat in the vanilla and butter extracts.
  4. Frost the Cookies:
    • Once the cookies are completely cooled, spread a generous layer of frosting on each.
    • Drizzle with caramel sauce and top with additional butterscotch chips for decoration, if desired.
