- 1/2 cup butterscotch chips, melted and cooled slightly
- 2 cups powdered sugar
- 2–3 tbsp heavy cream or milk
- 1/2 tsp vanilla extract
- 1/2 tsp butter extract (optional)
For Topping (Optional):
- Drizzle of caramel sauce
- Additional butterscotch chips
Instructions
- Make the Cookie Dough:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg, vanilla extract, and butter extract (if using) until combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the butterscotch chips.
- Bake the Cookies:
- Scoop tablespoon-sized balls of dough and place them on the prepared baking sheet about 2 inches apart.
- Bake for 8-10 minutes, or until the edges are lightly golden. The centers may look slightly underdone but will firm up as they cool.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Prepare the Butterbeer Frosting:
- In a mixing bowl, beat the butter until creamy. Add the melted butterscotch chips and mix until smooth.
- Gradually add the powdered sugar, alternating with heavy cream or milk, until the frosting reaches a spreadable consistency. Beat in the vanilla and butter extracts.
- Frost the Cookies:
- Once the cookies are completely cooled, spread a generous layer of frosting on each.
- Drizzle with caramel sauce and top with additional butterscotch chips for decoration, if desired.
Notes
- For a festive touch, sprinkle the cookies with gold edible glitter to mimic the magical feel of butterbeer.
- Store cookies in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
