hard candy

Ingredients:
2 cups granulated sugar
2/3 cup light corn syrup
3/4 cup water
1/2 teaspoon flavoring extract (such as peppermint, lemon, orange, etc.)
Food coloring (optional)
Powdered sugar (for dusting)
Equipment:

Candy thermometer
Baking sheet
Parchment paper or a silicone baking mat
Directions:

Prepare the Baking Sheet:

Line a baking sheet with parchment paper or a silicone baking mat. Dust it lightly with powdered sugar.
Combine Ingredients:

In a medium saucepan, combine the sugar, corn syrup, and water. Stir over medium heat until the sugar dissolves.
Cook the Candy:

Increase the heat and bring the mixture to a boil. Insert a candy thermometer.
Allow the mixture to boil without stirring until it reaches 300°F (hard-crack stage). This process can take a while, so be patient and keep a close eye on the temperature.
Add Flavor and Color:

Once the mixture reaches 300°F, remove it from heat.
Stir in the flavoring extract and a few drops of food coloring if desired. Be careful as the mixture will bubble up when you add these ingredients.
Pour and Cool:

Pour the candy mixture onto the prepared baking sheet.
Let it spread into a thin layer (you can tilt the sheet to help it along).
Allow the candy to cool and harden completely.
Break the Candy:

Once cooled, break the candy into pieces by tapping it with a knife handle or similar tool.
Store:

Store the candy in an airtight container, preferably with a layer of powdered sugar to prevent sticking.
Making hard candy at home allows you to customize the flavors and colors, creating unique and delicious treats. Remember to be cautious when handling the hot candy mixture, as it can be extremely hot. Enjoy your candy-making adventure!
