Description

This ham, asparagus, and Gruyère tart is a savory puff pastry dish perfect for brunch or a light lunch. It combines tender asparagus, smoky ham, and rich Gruyère cheese atop a flaky pastry base.


Ingredients

  • 1 sheet puff pastry, thawed
  • 1/2 cup grated Gruyère cheese
  • 68 asparagus spears, trimmed
  • 3 oz cooked ham, diced
  • 1/4 cup heavy cream
  • 1 egg
  • Salt and pepper, to taste
  • 1 tsp Dijon mustard (optional)
  • 1 egg, beaten (for egg wash)
  • All-purpose flour, for dusting

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. On a floured surface, roll out puff pastry into a rectangle and place on the baking sheet.
  3. Score a 1/2-inch border around the edge and prick the center with a fork.
  4. Optional: Spread a thin layer of Dijon mustard inside the border.
  5. In a bowl, whisk together the egg and cream. Season with salt and pepper.
  6. Sprinkle half the cheese over the pastry, then arrange ham and asparagus evenly on top.
  7. Pour egg mixture gently over the filling and top with remaining cheese.
  8. Brush the border with beaten egg.
  9. Bake for 20–25 minutes or until the pastry is golden and the filling is set.
  10. Cool slightly before slicing and serving.

Notes

  • Trim asparagus to fit neatly across the tart or cut into pieces for easier slicing.
  • Can substitute Gruyère with Swiss or Emmental cheese.
  • Delicious warm or at room temperature.
