- 1 sheet puff pastry, thawed
- 1/2 cup grated Gruyère cheese
- 6–8 asparagus spears, trimmed
- 3 oz cooked ham, diced
- 1/4 cup heavy cream
- 1 egg
- Salt and pepper, to taste
- 1 tsp Dijon mustard (optional)
- 1 egg, beaten (for egg wash)
- All-purpose flour, for dusting
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- On a floured surface, roll out puff pastry into a rectangle and place on the baking sheet.
- Score a 1/2-inch border around the edge and prick the center with a fork.
- Optional: Spread a thin layer of Dijon mustard inside the border.
- In a bowl, whisk together the egg and cream. Season with salt and pepper.
- Sprinkle half the cheese over the pastry, then arrange ham and asparagus evenly on top.
- Pour egg mixture gently over the filling and top with remaining cheese.
- Brush the border with beaten egg.
- Bake for 20–25 minutes or until the pastry is golden and the filling is set.
- Cool slightly before slicing and serving.
Notes
- Trim asparagus to fit neatly across the tart or cut into pieces for easier slicing.
- Can substitute Gruyère with Swiss or Emmental cheese.
- Delicious warm or at room temperature.
