Description

Ingredients

  • 1/4 cup milk
  • 1 cup cooked ham, diced
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded cheddar cheese (or Swiss)
  • 1/4 cup chopped onion
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, whisk together eggs, milk, salt, and pepper. Set aside.
  3. Heat olive oil in an oven-safe skillet over medium heat. Add onion and sauté for 2-3 minutes until soft.
  4. Add diced ham and spinach to the skillet and cook until spinach is wilted, about 2 minutes.
  5. Pour the egg mixture into the skillet and stir gently to combine with the filling.
  6. Sprinkle cheese evenly over the top.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set and the top is lightly golden.
