Ham and cheese pastry pockets are a savory, flaky treat made with puff pastry, deli ham, and melted cheese — perfect for breakfast, lunch, or as a hearty snack.

- 1 sheet puff pastry, thawed
- 4 slices deli ham
- 1/2 cup shredded cheddar cheese (or Swiss/Gruyère)
- 1 egg, beaten (for egg wash)
- 1 tbsp Dijon mustard (optional)
- All-purpose flour, for dusting
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Lightly flour your surface and roll out puff pastry slightly. Cut into 4 equal rectangles.
- Optional: Spread a thin layer of Dijon mustard on each rectangle.
- Top one half of each rectangle with a slice of ham and a generous sprinkle of cheese, leaving edges clear.
- Fold the pastry over to enclose filling and crimp edges with a fork to seal.
- Place on baking sheet and brush tops with egg wash.
- Cut a small slit in the top of each pocket for steam to escape.
- Bake for 15–18 minutes, or until puffed and golden brown.
- Cool slightly and serve warm.
Notes
- Switch up the cheese with Swiss, mozzarella, or pepper jack for different flavors.
- Great for using leftover ham.
- Can be made ahead and reheated in the oven or air fryer.
