- 1 lb ground turkey
- 2 tbsp olive oil (divided)
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 medium sweet potatoes, peeled and diced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 (14.5 oz) can diced tomatoes (with juice)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp chili powder (optional)
- 1/2 tsp dried oregano
- 1 cup shredded mozzarella or cheddar cheese (optional)
- 2 tbsp fresh parsley or cilantro, chopped (for garnish)
Instructions
Step 1: Preheat the Oven
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
Step 2: Cook the Ground Turkey
- Heat 1 tbsp olive oil in a skillet over medium heat.
- Add onion and garlic, cooking for 2-3 minutes until softened.
- Add ground turkey, breaking it apart. Cook until browned (5-6 minutes). Drain excess liquid.
- Stir in salt, pepper, smoked paprika, cumin, chili powder, and oregano.
Step 3: Sauté the Vegetables
- In the same skillet, add 1 tbsp olive oil, then sauté sweet potatoes, bell pepper, and zucchini for 5 minutes.
- Stir in diced tomatoes and let cook for 2 minutes.
Step 4: Assemble & Bake
- Transfer the turkey mixture and vegetables to the baking dish.
- Mix everything together and spread evenly.
- If using, sprinkle with shredded cheese.
- Cover with foil and bake for 25 minutes.
- Uncover and bake for another 10 minutes, until sweet potatoes are tender.
Step 5: Serve & Enjoy
- Remove from the oven and let rest for 5 minutes.
- Garnish with fresh parsley or cilantro and serve warm.
