Ingredients
Units
Scale
- 1 lb (450 g) ground beef
- 4 medium potatoes (peeled and diced)
- 1 medium onion (diced)
- 2 cloves garlic (minced)
- 1 green bell pepper (optional, diced)
- 2 tbsp olive oil or butter
- 1 tsp paprika
- 1/2 tsp ground cumin
- 1/2 tsp chili powder (optional)
- Salt and black pepper (to taste)
- 1/4 cup beef or chicken broth (optional, for moisture)
- 2 tbsp fresh parsley or cilantro (chopped, for garnish)
Instructions
- Cook the Potatoes:
- Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat. Add the diced potatoes and cook, stirring occasionally, for 8-10 minutes until they begin to soften and turn golden. Remove and set aside.
- Cook the Ground Beef:
- In the same skillet, add the ground beef and cook over medium heat, breaking it up with a spatula, until browned and cooked through (about 5-7 minutes). Drain excess fat if necessary.
- Sauté the Vegetables:
- Push the beef to one side of the skillet and add the remaining olive oil. Add the onion, garlic, and green bell pepper (if using). Sauté for 3-4 minutes until softened and fragrant.
- Combine and Season:
- Stir the cooked potatoes back into the skillet with the beef and vegetables. Sprinkle with paprika, cumin, chili powder (if using), salt, and black pepper. Mix well to coat everything in the seasonings.
- Add Broth (Optional):
- If the mixture seems dry, add 1/4 cup of broth and simmer for 2-3 minutes to allow the flavors to meld and the potatoes to finish cooking.
- Garnish and Serve:
- Remove from heat and sprinkle with fresh parsley or cilantro. Serve hot with a side of rice, tortillas, or crusty bread.
Notes
- For a spicier version, add diced jalapeños or a pinch of cayenne pepper.
- Sweet potatoes can be used instead of regular potatoes for a twist.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated on the stovetop.
