- 1 small onion, diced
- 1 packet taco seasoning mix (or 2 tablespoons homemade taco seasoning)
- 1 can (10 oz / 284 g) Rotel (diced tomatoes with green chilies), undrained
- 1 can (10 oz / 284 g) cream of mushroom soup (or cream of chicken)
- 1 cup (240 g) sour cream
- 2 cups (200 g) shredded cheddar cheese (or Mexican cheese blend)
- 1 bag (9.75 oz / 275 g) Nacho Cheese Doritos, lightly crushed
- 2 tablespoons olive oil
For Garnish (Optional):
- Fresh cilantro, chopped
- Sliced jalapeños
- Diced tomatoes
- Green onions, sliced
- Sour cream or guacamole for serving
Instructions
1. Cook the ground beef:
- In a large skillet, heat olive oil over medium heat.
- Add diced onion and cook for 2-3 minutes until soft.
- Add ground beef and cook until browned, breaking it up as it cooks.
- Drain excess fat, then stir in taco seasoning and Rotel. Cook for another 3-4 minutes until well combined.
2. Make the creamy filling:
- Reduce heat to low and stir in cream of mushroom soup and sour cream until smooth and combined.
- Remove from heat.
3. Layer the casserole:
- Preheat oven to 350°F (175°C).
- In a 9×13-inch baking dish, layer half of the crushed Doritos on the bottom.
- Spread half of the beef mixture over the Doritos, followed by half of the shredded cheese.
- Repeat the layers with the remaining Doritos, beef mixture, and cheese.
4. Bake:
- Cover the casserole with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
5. Garnish and serve:
- Let the casserole cool for 5 minutes before serving.
- Top with cilantro, jalapeños, diced tomatoes, or green onions as desired.
