Description

This Ground Beef Doritos Casserole is a cheesy, crunchy, flavor-packed dish that’s perfect for busy weeknights, potlucks, or game-day parties! Loaded with seasoned ground beef, gooey melted cheese, and layers of crunchy Doritos, it’s a Tex-Mex comfort food classic your whole family will love.

  • 1 small onion, diced
  • 1 packet taco seasoning mix (or 2 tablespoons homemade taco seasoning)
  • 1 can (10 oz / 284 g) Rotel (diced tomatoes with green chilies), undrained
  • 1 can (10 oz / 284 g) cream of mushroom soup (or cream of chicken)
  • 1 cup (240 g) sour cream
  • 2 cups (200 g) shredded cheddar cheese (or Mexican cheese blend)
  • 1 bag (9.75 oz / 275 g) Nacho Cheese Doritos, lightly crushed
  • 2 tablespoons olive oil

For Garnish (Optional):

  • Fresh cilantro, chopped
  • Sliced jalapeños
  • Diced tomatoes
  • Green onions, sliced
  • Sour cream or guacamole for serving

Instructions

1. Cook the ground beef:

  • In a large skillet, heat olive oil over medium heat.
  • Add diced onion and cook for 2-3 minutes until soft.
  • Add ground beef and cook until browned, breaking it up as it cooks.
  • Drain excess fat, then stir in taco seasoning and Rotel. Cook for another 3-4 minutes until well combined.

2. Make the creamy filling:

  • Reduce heat to low and stir in cream of mushroom soup and sour cream until smooth and combined.
  • Remove from heat.

3. Layer the casserole:

  • Preheat oven to 350°F (175°C).
  • In a 9×13-inch baking dish, layer half of the crushed Doritos on the bottom.
  • Spread half of the beef mixture over the Doritos, followed by half of the shredded cheese.
  • Repeat the layers with the remaining Doritos, beef mixture, and cheese.

4. Bake:

  • Cover the casserole with foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.

5. Garnish and serve:

  • Let the casserole cool for 5 minutes before serving.
  • Top with cilantro, jalapeños, diced tomatoes, or green onions as desired.
