- 1 lb ground beef
- 1 lb Brussels sprouts, trimmed and halved
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon soy sauce or coconut aminos
- 1/2 teaspoon smoked paprika
- Salt and black pepper, to taste
- Optional: red pepper flakes for heat
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add Brussels sprouts, cut side down, and cook for 5-7 minutes until browned and tender. Remove from pan and set aside.
- In the same skillet, add remaining olive oil and diced onion. Sauté for 2-3 minutes until softened.
- Add garlic and cook for another 30 seconds.
- Add ground beef and cook until browned, breaking it up with a spoon, about 6-8 minutes.
- Stir in soy sauce, smoked paprika, salt, pepper, and red pepper flakes if using.
- Return Brussels sprouts to the skillet and stir to combine. Cook for another 2-3 minutes until everything is heated through.
- Serve hot as-is or over rice or cauliflower rice.
