Scale
- 1 cup stone-ground grits
- 4 cups water (or 3 cups water + 1 cup milk for creamier grits)
- 1/2 tsp salt
- 2 tbsp unsalted vegan butter (or regular butter)
- 1/2 cup shredded cheese (optional)
- Black pepper, to taste
Instructions
- Bring water (and milk, if using) and salt to a boil in a medium saucepan.
- Slowly whisk in the grits, stirring constantly to prevent lumps.
- Reduce heat to low and cover. Cook for 20–25 minutes, stirring frequently, until grits are thick and tender.
- Remove from heat and stir in butter until melted. Add cheese, if using, and stir until smooth.
- Season with black pepper and more salt if needed. Serve warm.
Notes
- For extra creamy grits, use all milk instead of water.
- Top with sautéed shrimp, bacon, or roasted veggies for a hearty meal.
- Leftover grits can be stored in the fridge and reheated with a splash of milk or water.
