Grilled Zucchini is a light and flavorful side dish that’s quick to make and pairs well with just about anything. Seasoned with olive oil, garlic, and herbs, these tender zucchini slices are slightly charred on the outside and perfectly soft inside. Great for cookouts, BBQs, or easy weeknight dinners!
Ingredients

2-3 medium zucchini, sliced into 1/4-inch thick rounds or lengthwise strips

1 1/2 tbsp olive oil

1 clove garlic, minced

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp Italian seasoning or dried oregano

Optional: fresh lemon juice, grated Parmesan, or chopped fresh herbs (like basil or parsley)
Instructions

Preheat your grill to medium-high heat (about 400°F).

In a large bowl, toss zucchini slices with olive oil, garlic, salt, pepper, and Italian seasoning.

Place zucchini slices directly on the grill grates (or use a grill basket or foil for smaller pieces).

Grill for 3–4 minutes per side, or until tender and grill marks appear.

Remove from grill and serve immediately.

Optional: Squeeze fresh lemon juice over the top, sprinkle with Parmesan, or garnish with fresh herbs.
Notes

You can slice zucchini lengthwise or into rounds—whatever works best for you.

Don’t overcook or the zucchini will get mushy.
