Description
These Grilled Shrimp Skewers are juicy, smoky, and full of zesty flavor thanks to a simple garlic-lemon marinade. They cook up in just a few minutes, making them perfect for a quick summer meal or easy entertaining on the grill.
Ingredients

1 1/2 lbs large shrimp, peeled and deveined (tails on or off)

3 tbsp olive oil

3 garlic cloves, minced

Juice and zest of 1 lemon

1 tbsp chopped fresh parsley

1/2 tsp paprika

Salt and black pepper, to taste

Lemon wedges, for serving

Wooden or metal skewers (if wooden, soak in water for 30 minutes)
Instructions

In a large bowl, whisk together olive oil, garlic, lemon juice and zest, parsley, paprika, salt, and pepper.

Add shrimp to the bowl and toss to coat. Let marinate for 15–30 minutes in the fridge.

Thread shrimp onto skewers (about 4–5 per skewer).

Preheat grill to medium-high heat and lightly oil the grates.

Grill shrimp for 2–3 minutes per side, until pink, opaque, and lightly charred.

Remove from grill and serve hot with lemon wedges.
Notes

Don’t overcook! Shrimp only need a few minutes per side.

Great served over rice, salad, or in tacos.

Add a pinch of red pepper flakes to the marinade if you like a little heat.
