These grilled shrimp pineapple skewers are sweet, smoky, and super simple to make. Juicy shrimp and fresh pineapple chunks are marinated in a flavorful garlic-lime sauce, then grilled to perfection. Great for summer BBQs, weeknight dinners, or a light tropical meal anytime.
Ingredients

1 pound large shrimp, peeled and deveined (tails on or off)

2 cups fresh pineapple chunks

1 red bell pepper, cut into 1-inch pieces (optional)

2 tablespoons olive oil

2 tablespoons lime juice (fresh)

2 garlic cloves, minced

1 tablespoon honey or brown sugar

1 teaspoon chili powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Wooden or metal skewers
Instructions

Soak wooden skewers in water for at least 20 minutes if using to prevent burning.

Marinate the shrimp: In a bowl, mix olive oil, lime juice, garlic, honey, chili powder, salt, and pepper. Add the shrimp and toss to coat. Let it marinate for 15–20 minutes.

Assemble the skewers: Thread shrimp, pineapple chunks, and optional bell pepper pieces onto skewers, alternating as you go.

Preheat grill to medium-high heat (around 375–400°F).

Grill the skewers: Place them on the grill and cook for 2–3 minutes per side, or until the shrimp turn pink and are cooked through. Pineapple should have light grill marks.

Serve hot: Garnish with fresh cilantro or a squeeze of lime, if desired.

Canned pineapple can be used in a pinch, but fresh gives the best flavor and texture.
