Ingredients
-
1.5 lbs baby potatoes or Yukon Golds, cut into halves or quarters
-
2 tbsp olive oil
-
2 cloves garlic, minced
-
1 tsp salt
-
1/2 tsp black pepper
-
1 tsp dried rosemary or Italian seasoning
-
Optional: chopped fresh parsley, grated Parmesan, or a squeeze of lemon for serving
-
Heavy-duty aluminum foil or grill-safe pan
Instructions
-
Preheat grill to medium-high heat (around 400°F).
-
In a large bowl, toss potatoes with olive oil, garlic, salt, pepper, and rosemary (or seasoning of choice).
-
Place seasoned potatoes in a large piece of foil and fold into a sealed packet (or divide into 2 packets for even cooking).
-
Grill packets for 20–25 minutes, turning once halfway through, until potatoes are fork-tender and slightly crispy on the edges.
-
Carefully open foil (watch for steam), and garnish with fresh parsley, Parmesan, or lemon if desired.
-
Serve hot alongside grilled meats, veggies, or your favorite summer dishes.
Notes
-
Want extra crispy potatoes? Open the foil packet in the last 5 minutes to let the edges brown.
-
You can also parboil the potatoes for 5 minutes beforehand for even faster grilling.
-
Add sliced onions or bell peppers to the packet for a complete veggie side.
