Description

A vibrant and protein-packed grilled paneer salad featuring marinated paneer cubes, fresh vegetables, and a tangy lemon-herb dressing. A wholesome vegetarian dish ideal for lunch or dinner.


Ingredients

  • 200g paneer, cut into cubes
  • 1 tablespoon olive oil
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon cumin powder
  • Salt to taste
  • 2 cups mixed salad greens
  • 1/2 cup cucumber, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1 tablespoon chopped cilantro or mint
  • For Dressing:
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon honey or maple syrup
  • Salt and black pepper to taste

Instructions

  1. In a bowl, marinate the paneer cubes with turmeric, red chili powder, cumin powder, salt, and 1 tablespoon olive oil. Let sit for 10–15 minutes.
  2. Grill or pan-fry the paneer on medium heat until golden on all sides. Set aside to cool slightly.
  3. In a large mixing bowl, combine salad greens, cucumber, cherry tomatoes, and red onion.
  4. In a small bowl, whisk together lemon juice, olive oil, honey (or maple syrup), salt, and pepper.
  5. Add the grilled paneer to the salad and drizzle with the dressing.
  6. Toss gently to combine and garnish with chopped cilantro or mint.
  7. Serve immediately or chill for 10 minutes before serving.

Notes

  • Use tofu instead of paneer for a vegan version.
  • Add avocado or roasted chickpeas for extra texture and nutrition.
  • Can be served as a light main or a hearty side dish.
