- 200g paneer, cut into cubes
- 1 tablespoon olive oil
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon cumin powder
- Salt to taste
- 2 cups mixed salad greens
- 1/2 cup cucumber, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1 tablespoon chopped cilantro or mint
- For Dressing:
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1/2 teaspoon honey or maple syrup
- Salt and black pepper to taste
Instructions
- In a bowl, marinate the paneer cubes with turmeric, red chili powder, cumin powder, salt, and 1 tablespoon olive oil. Let sit for 10–15 minutes.
- Grill or pan-fry the paneer on medium heat until golden on all sides. Set aside to cool slightly.
- In a large mixing bowl, combine salad greens, cucumber, cherry tomatoes, and red onion.
- In a small bowl, whisk together lemon juice, olive oil, honey (or maple syrup), salt, and pepper.
- Add the grilled paneer to the salad and drizzle with the dressing.
- Toss gently to combine and garnish with chopped cilantro or mint.
- Serve immediately or chill for 10 minutes before serving.
Notes
- Use tofu instead of paneer for a vegan version.
- Add avocado or roasted chickpeas for extra texture and nutrition.
- Can be served as a light main or a hearty side dish.
