Scale
- For the Hot Honey Chicken:
- 4 boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/3 cup honey
- 1 tablespoon hot sauce (like Sriracha or your favorite)
- 1/2 teaspoon red pepper flakes (optional, for extra heat)
- For the Sweet Corn Salad:
- 3 ears fresh corn, kernels removed (or 2 cups frozen, thawed)
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh cilantro or parsley, chopped
- Juice of 1 lime
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions
- Prepare the Chicken:
- In a small bowl, mix the olive oil, smoked paprika, garlic powder, salt, and black pepper. Rub this mixture over the chicken breasts or thighs.
- In another bowl, combine honey, hot sauce, and red pepper flakes (if using) to make the hot honey glaze. Set aside.
- Grill the Chicken:
- Preheat your grill or grill pan to medium-high heat. Cook the chicken for 5–7 minutes per side, or until the internal temperature reaches 165°F (74°C). During the last 2 minutes of cooking, brush the chicken generously with the hot honey glaze.
- Make the Sweet Corn Salad:
- In a large bowl, combine the corn, cherry tomatoes, cucumber, red onion, and cilantro or parsley.
- Drizzle with lime juice and olive oil. Season with salt and pepper, then toss to combine.
- Serve:
- Plate the grilled hot honey chicken alongside the sweet corn salad. Drizzle additional hot honey over the chicken for extra flavor, if desired.
Notes
- Use a grill or stovetop griddle for cooking the chicken.
- For added sweetness, grill the corn before cutting off the kernels.
- Substitute honey with maple syrup for a slightly different flavor profile.
