Scale
- 4 boneless, skinless chicken breasts
- 1 cup teriyaki sauce (plus extra for brushing)
- 4 pineapple rings
- 4 hamburger buns
- 4 slices provolone or Swiss cheese
- 1 red onion, sliced into rings (optional)
- Lettuce leaves
- Mayonnaise or desired condiments
Instructions
- Place chicken breasts in a zip-top bag or shallow dish and pour teriyaki sauce over them. Marinate for at least 30 minutes or up to 8 hours in the refrigerator.
- Preheat grill to medium-high heat. Remove chicken from marinade and discard used marinade.
- Grill chicken for 6–7 minutes per side, or until fully cooked and internal temperature reaches 165°F (74°C). During the last minute of grilling, place a slice of cheese on each piece to melt.
- Grill pineapple rings for about 2 minutes per side until lightly charred.
- Toast buns on the grill if desired.
- Assemble sandwiches by spreading mayonnaise or preferred condiments on the buns, then layering lettuce, grilled chicken with melted cheese, grilled pineapple, and red onion if using.
- Serve warm with extra teriyaki sauce on the side.
Notes
- For extra flavor, use a teriyaki glaze instead of regular sauce for basting while grilling.
- Use chicken thighs for a juicier alternative.
- Try adding a slice of cooked bacon for a smoky twist.
- These sandwiches pair great with sweet potato fries or coleslaw.
