Description

Grilled Hawaiian Chicken Sandwiches are juicy, sweet, and savory sandwiches featuring marinated grilled chicken breasts, grilled pineapple, and a tangy teriyaki sauce, all stacked on toasted buns for a tropical-inspired meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup teriyaki sauce (plus extra for brushing)
  • 4 pineapple rings
  • 4 hamburger buns
  • 4 slices provolone or Swiss cheese
  • 1 red onion, sliced into rings (optional)
  • Lettuce leaves
  • Mayonnaise or desired condiments

Instructions

  1. Place chicken breasts in a zip-top bag or shallow dish and pour teriyaki sauce over them. Marinate for at least 30 minutes or up to 8 hours in the refrigerator.
  2. Preheat grill to medium-high heat. Remove chicken from marinade and discard used marinade.
  3. Grill chicken for 6–7 minutes per side, or until fully cooked and internal temperature reaches 165°F (74°C). During the last minute of grilling, place a slice of cheese on each piece to melt.
  4. Grill pineapple rings for about 2 minutes per side until lightly charred.
  5. Toast buns on the grill if desired.
  6. Assemble sandwiches by spreading mayonnaise or preferred condiments on the buns, then layering lettuce, grilled chicken with melted cheese, grilled pineapple, and red onion if using.
  7. Serve warm with extra teriyaki sauce on the side.
