Ingredients

4 boneless, skinless chicken breasts (or thighs)

1/3 cup olive oil

1/4 cup fresh lemon juice (about 1 large lemon)

3 garlic cloves, minced

1 tbsp red wine vinegar

2 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

Optional garnish: chopped fresh parsley, lemon wedges
Instructions

Make the marinade:
In a medium bowl or zip-top bag, whisk together olive oil, lemon juice, garlic, red wine vinegar, oregano, salt, and pepper. -
Marinate the chicken:
Add chicken to the marinade, turning to coat evenly. Seal and refrigerate for at least 30 minutes or up to 8 hours. -
Grill:
Preheat grill to medium-high heat. Remove chicken from marinade and grill for 6–8 minutes per side, or until the internal temperature reaches 165°F. -
Serve:
Let chicken rest for 5 minutes before slicing. Garnish with parsley and serve with lemon wedges, pita, or tzatziki sauce.
