Description

Grilled Greek Chicken is a juicy and herb-packed dish marinated in a blend of olive oil, lemon juice, garlic, and oregano. It’s simple, healthy, and bursting with classic Mediterranean flavors—perfect for summer grilling, meal prep, or pairing with a fresh Greek salad.


Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)

  • 1/3 cup olive oil

  • 1/4 cup fresh lemon juice (about 1 large lemon)

  • 3 garlic cloves, minced

  • 1 tbsp red wine vinegar

  • 2 tsp dried oregano

  • 1 tsp salt

  • 1/2 tsp black pepper

  • Optional garnish: chopped fresh parsley, lemon wedges


Instructions

  1. Make the marinade:
    In a medium bowl or zip-top bag, whisk together olive oil, lemon juice, garlic, red wine vinegar, oregano, salt, and pepper.

  2. Marinate the chicken:
    Add chicken to the marinade, turning to coat evenly. Seal and refrigerate for at least 30 minutes or up to 8 hours.

  3. Grill:
    Preheat grill to medium-high heat. Remove chicken from marinade and grill for 6–8 minutes per side, or until the internal temperature reaches 165°F.

  4. Serve:
    Let chicken rest for 5 minutes before slicing. Garnish with parsley and serve with lemon wedges, pita, or tzatziki sauce.

  • Works well with chicken thighs or drumsticks too—just adjust cooking time.
