Instructions
- Preheat grill to medium heat (about 350°F/175°C).
- Pat chicken leg quarters dry with paper towels.
- In a small bowl, mix olive oil, garlic powder, onion powder, smoked paprika, thyme, black pepper, and salt.
- Rub the seasoning mixture all over the chicken leg quarters.
- Place the chicken on the grill, skin side down. Grill for about 10-12 minutes until the skin is crispy.
- Flip the chicken and continue grilling for another 25-30 minutes, or until the internal temperature reaches 175°F (80°C).
- Move the chicken to indirect heat if it browns too quickly.
- Remove from grill, let rest for 5 minutes, and serve with lemon wedges if desired.
