Ingredients

4 boneless, skinless chicken breasts

2 tbsp olive oil

1 tsp Italian seasoning

Salt and pepper, to taste

2-3 ripe tomatoes, sliced

8 oz fresh mozzarella, sliced

1/4 cup fresh basil leaves

Balsamic glaze, for drizzling
Instructions

Prep the chicken:
Rub chicken breasts with olive oil, Italian seasoning, salt, and pepper. Let sit while the grill preheats. -
Grill:
Preheat grill to medium-high heat. Grill chicken for 5–7 minutes per side, or until internal temperature reaches 165°F. -
Add toppings:
During the last minute of grilling, place slices of tomato and mozzarella on top of each piece of chicken. Cover grill briefly to melt the cheese. -
Serve:
Remove chicken from grill. Top with fresh basil leaves and a generous drizzle of balsamic glaze.
