Ingredients
For the chicken:

For the bruschetta topping:

2 cups cherry tomatoes, halved (or diced roma tomatoes)

1/4 cup finely chopped red onion

1/4 cup chopped fresh basil

2 cloves garlic, minced

1 tbsp balsamic vinegar

Salt and pepper, to taste
To finish:

1/4 cup shredded mozzarella or shaved Parmesan (optional)

Balsamic glaze, for drizzling
Instructions

Prep the chicken:
Drizzle chicken with olive oil and season with Italian seasoning, salt, and pepper. -
Grill:
Preheat grill to medium-high heat. Grill chicken for 6–8 minutes per side, or until fully cooked and juices run clear (internal temp 165°F). -
Make the bruschetta topping:
In a medium bowl, combine tomatoes, red onion, basil, garlic, and balsamic vinegar. Season with salt and pepper. Let sit while chicken cooks. -
Assemble:
Top each grilled chicken breast with a spoonful of bruschetta mix. Sprinkle with mozzarella or Parmesan if desired.
