- 3/4 cup (180 ml) cold water
- 5 tablespoons unflavored gelatin powder
- 1/2 cup (120 ml) strongly brewed green tea
- 1/3 cup (80 ml) fresh ginger juice
- 1/4 cup (60 ml) fresh lemon juice
- Honey, to taste (optional)
Instructions
- Bloom the Gelatin:
- Pour the cold water into a saucepan.
- Sprinkle the gelatin powder evenly over the surface of the water.
- Allow it to sit for a few minutes to let the gelatin absorb the water and bloom.
- Prepare the Green Tea:
- Brew a strong cup of green tea by steeping green tea bags or loose leaves in hot water according to the package instructions.
- Measure out ½ cup (120 ml) of the brewed tea.
- Combine Ingredients:
- Add the brewed green tea, ginger juice, and lemon juice to the saucepan with the bloomed gelatin.
- Gently warm the mixture over low heat, stirring continuously until the gelatin is fully dissolved and the mixture is smooth.
- Do not let the mixture boil, as high heat can degrade the gelatin’s setting properties.
- If desired, add honey to taste and stir until fully incorporated.
- Mold the Gummies:
- Pour the mixture into silicone molds or a shallow baking dish lined with parchment paper.
- Refrigerate for at least 2 hours, or until the gummies are fully set.
- Unmold and Store:
- Once set, remove the gummies from the molds or cut them into squares if using a baking dish.
- Store the gummies in an airtight container in the refrigerator for up to 2 weeks.
Notes
- Ginger Juice: To make fresh ginger juice, grate fresh ginger and squeeze the pulp through a cheesecloth or fine mesh sieve to extract the juice.
- Sweetness Adjustment: The amount of honey can be adjusted based on your sweetness preference. You can also substitute honey with other sweeteners like maple syrup or stevia.
- Vegan Option: For a vegan alternative, replace gelatin with agar-agar powder. Note that the setting properties and texture may vary.
