Description

Green Tea, Lemon, and Ginger Gummies are a delightful and healthful treat that combines the antioxidant properties of green tea, the immune-boosting benefits of lemon, and the anti-inflammatory effects of ginger. These homemade gummies are easy to make and perfect for a nutritious snack.

Ingredients

Units Scale
  • 3/4 cup (180 ml) cold water
  • 5 tablespoons unflavored gelatin powder
  • 1/2 cup (120 ml) strongly brewed green tea
  • 1/3 cup (80 ml) fresh ginger juice
  • 1/4 cup (60 ml) fresh lemon juice
  • Honey, to taste (optional)

Instructions

  • Bloom the Gelatin:
    • Pour the cold water into a saucepan.
    • Sprinkle the gelatin powder evenly over the surface of the water.
    • Allow it to sit for a few minutes to let the gelatin absorb the water and bloom.
  • Prepare the Green Tea:
    • Brew a strong cup of green tea by steeping green tea bags or loose leaves in hot water according to the package instructions.
    • Measure out ½ cup (120 ml) of the brewed tea.
  • Combine Ingredients:
    • Add the brewed green tea, ginger juice, and lemon juice to the saucepan with the bloomed gelatin.
    • Gently warm the mixture over low heat, stirring continuously until the gelatin is fully dissolved and the mixture is smooth.
    • Do not let the mixture boil, as high heat can degrade the gelatin’s setting properties.
    • If desired, add honey to taste and stir until fully incorporated.
  • Mold the Gummies:
    • Pour the mixture into silicone molds or a shallow baking dish lined with parchment paper.
    • Refrigerate for at least 2 hours, or until the gummies are fully set.
  • Unmold and Store:
    • Once set, remove the gummies from the molds or cut them into squares if using a baking dish.
    • Store the gummies in an airtight container in the refrigerator for up to 2 weeks.

Notes

  • Ginger Juice: To make fresh ginger juice, grate fresh ginger and squeeze the pulp through a cheesecloth or fine mesh sieve to extract the juice.
  • Sweetness Adjustment: The amount of honey can be adjusted based on your sweetness preference. You can also substitute honey with other sweeteners like maple syrup or stevia.
  • Vegan Option: For a vegan alternative, replace gelatin with agar-agar powder. Note that the setting properties and texture may vary.
