Description

These Green Tea, Lemon & Ginger Chews are a naturally soothing and flavorful treat. Perfect for aiding digestion or calming a sore throat, these chewy bites pack the health benefits of green tea, zesty lemon, and warming ginger in a sweet, easy-to-make form.


Ingredients

  • 1/2 cup (120 ml) brewed green tea, strong
  • 1/4 cup (60 ml) fresh lemon juice
  • 2 tbsp fresh ginger, finely grated
  • 1/2 cup (120 ml) honey or maple syrup
  • 1/4 tsp ground turmeric (optional, for extra anti-inflammatory benefits)
  • 2 tbsp unflavored gelatin (about 2 packets)



Instructions

  1. Prepare the Ingredients:
    • Brew a strong green tea and let it cool slightly.
    • Juice the lemon and grate the ginger.
  2. Combine Liquid Ingredients:
    • In a small saucepan, mix the green tea, lemon juice, grated ginger, and honey. Heat gently over medium heat, stirring occasionally, until the mixture is warm (but not boiling).
  3. Add Gelatin:
    • Sprinkle the gelatin over the warm mixture and whisk continuously until the gelatin dissolves completely. If using turmeric, add it now.
  4. Simmer Gently:
    • Reduce heat to low and continue stirring for 2-3 minutes. Do not let the mixture boil.
  5. Pour and Set:
    • Pour the mixture into silicone molds or a parchment-lined baking dish. Let it cool slightly before transferring to the refrigerator. Chill for 2-3 hours, or until firm.
  6. Cut and Store:
    • If using a baking dish, cut the set mixture into bite-sized squares. Store the chews in an airtight container in the refrigerator for up to 1 week.

Notes

  • Adjust sweetness by adding more or less honey to taste.
  • For extra zing, add a pinch of cayenne pepper or black pepper to boost absorption of turmeric.
  • These chews can also be frozen for longer storage; thaw before eating.
