- 1/2 cup (120 ml) brewed green tea, strong
- 1/4 cup (60 ml) fresh lemon juice
- 2 tbsp fresh ginger, finely grated
- 1/2 cup (120 ml) honey or maple syrup
- 1/4 tsp ground turmeric (optional, for extra anti-inflammatory benefits)
- 2 tbsp unflavored gelatin (about 2 packets)
Instructions
- Prepare the Ingredients:
- Brew a strong green tea and let it cool slightly.
- Juice the lemon and grate the ginger.
- Combine Liquid Ingredients:
- In a small saucepan, mix the green tea, lemon juice, grated ginger, and honey. Heat gently over medium heat, stirring occasionally, until the mixture is warm (but not boiling).
- Add Gelatin:
- Sprinkle the gelatin over the warm mixture and whisk continuously until the gelatin dissolves completely. If using turmeric, add it now.
- Simmer Gently:
- Reduce heat to low and continue stirring for 2-3 minutes. Do not let the mixture boil.
- Pour and Set:
- Pour the mixture into silicone molds or a parchment-lined baking dish. Let it cool slightly before transferring to the refrigerator. Chill for 2-3 hours, or until firm.
- Cut and Store:
- If using a baking dish, cut the set mixture into bite-sized squares. Store the chews in an airtight container in the refrigerator for up to 1 week.
Notes
- Adjust sweetness by adding more or less honey to taste.
- For extra zing, add a pinch of cayenne pepper or black pepper to boost absorption of turmeric.
- These chews can also be frozen for longer storage; thaw before eating.
