Description

Green Goddess Pasta Salad is a vibrant and refreshing dish featuring tender pasta, crisp vegetables, and a creamy, herby Green Goddess dressing, perfect for a light lunch or summer gathering.

Ingredients

Units Scale
  • 12 oz rotini or bowtie pasta
  • 1 cup baby spinach, chopped
  • 1/2 cup cucumber, diced
  • 1/2 cup green peas, thawed if frozen
  • 1/2 avocado, diced
  • 1/4 cup green onions, sliced
  • 1/2 cup Green Goddess dressing
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and rinse under cold water to cool completely.
  2. In a large bowl, combine cooled pasta, spinach, cucumber, peas, avocado, and green onions.
  3. Pour Green Goddess dressing over the salad and toss gently to coat.
  4. Season with salt and black pepper to taste.
  5. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
  6. Garnish with fresh basil or parsley before serving if desired.

Notes

  • Use a homemade or high-quality store-bought Green Goddess dressing for best flavor.
  • Add grilled chicken or shrimp for extra protein.
  • Best served chilled and enjoyed the same day due to the avocado.
