Description

Greek Salad Pinwheels are a fresh and flavorful appetizer made by rolling up a Greek-inspired filling of vegetables, feta cheese, and hummus in soft tortillas—perfect for parties, picnics, or lunchboxes.

Ingredients

Units Scale
  • 4 large flour tortillas (10-inch)
  • 1 cup hummus (store-bought or homemade)
  • 1 cup crumbled feta cheese
  • 1 cup diced cucumber
  • 1/2 cup diced red bell pepper
  • 1/4 cup sliced kalamata olives
  • 1/4 cup finely chopped red onion
  • 1 tablespoon chopped fresh dill or parsley
  • Salt and black pepper to taste

Instructions

  1. Lay out the tortillas on a flat surface and spread each evenly with hummus.
  2. In a bowl, mix feta, cucumber, bell pepper, olives, red onion, and herbs. Season with salt and pepper.
  3. Divide the veggie mixture evenly among the tortillas, spreading it in an even layer.
  4. Tightly roll up each tortilla and wrap in plastic wrap. Chill for 30 minutes to firm up.
  5. Unwrap and slice into 1-inch pinwheels before serving.

Notes

  • Use whole wheat or spinach tortillas for added flavor and color.
  • Make ahead and refrigerate up to 24 hours before slicing.
  • Add a layer of spinach or arugula for extra greens and texture.
