Ingredients

Scale
  • 4 boneless, skinless chicken breasts (or thighs)
  • ¼ cup olive oil
  • ¼ cup fresh lemon juice (about 12 lemons)
  • Zest of 1 lemon
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh parsley, chopped (for garnish)
  • Lemon slices, for garnish

Instructions

  1. Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper.
  2. Coat the Chicken: Place the chicken in a resealable plastic bag or shallow dish, then pour the marinade over the chicken. Marinate for at least 30 minutes or up to 4 hours in the refrigerator.
  3. Cook the Chicken: Preheat the oven to 400°F (200°C). Place the marinated chicken in a baking dish and bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  4. Serve: Garnish with fresh parsley and lemon slices. Serve with rice, roasted potatoes, or a Greek salad, and enjoy!

Notes

  • Grilling Option: For a grilled version, cook the chicken on medium-high heat for 5-7 minutes per side, until fully cooked.
  • Extra Flavor: Add a splash of white wine or chicken broth to the baking dish for added flavor and moisture while baking.
