For the Chicken Marinade:
- 1 1/2 lbs boneless, skinless chicken thighs (or chicken breasts)
- 1/4 cup plain Greek yogurt
- 3 tbsp olive oil
- 2 tbsp lemon juice (freshly squeezed)
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
For the Tzatziki Sauce:
- 1 cup plain Greek yogurt
- 1/2 cucumber, grated and squeezed dry
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1 tbsp fresh dill or mint, chopped
- 1/4 tsp salt
For Serving:
- 4–6 pita breads
- 1 cup cherry tomatoes, halved
- 1/2 small red onion, thinly sliced
- 1 cup lettuce, chopped (optional)
- 1/2 cup feta cheese, crumbled (optional)
- Lemon wedges, for serving

Marinate the Chicken:
- In a bowl, whisk together Greek yogurt, olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper.
- Add the chicken and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 24 hours for deeper flavor).

Make the Tzatziki Sauce:
- In a small bowl, mix Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, dill, and salt. Stir well.
- Cover and refrigerate until ready to serve.

Cook the Chicken:
- Heat a grill pan or skillet over medium-high heat.
- Cook the chicken for 5-6 minutes per side, or until fully cooked and slightly charred.
- Remove from heat and let rest for 5 minutes, then slice into strips.

Assemble the Gyros:
- Warm the pita bread in a dry skillet or microwave.
- Add sliced chicken, tomatoes, red onion, and lettuce (if using).
- Drizzle with tzatziki sauce and sprinkle with feta cheese.
- Wrap up and serve with lemon wedges.
Notes
- For extra crispy chicken, grill over an open flame or use a cast-iron skillet.
- Swap out chicken for lamb, beef, or grilled veggies for a different variation.
