Description

Granola Cups are a fun and wholesome snack or breakfast idea made with baked granola shaped into muffin cups, perfect for filling with yogurt, fresh fruit, or nut butter.


Ingredients

  • 2 cups old-fashioned rolled oats
  • 1/2 cup chopped nuts (e.g., almonds, walnuts)
  • 1/4 cup honey or maple syrup
  • 1/4 cup melted coconut oil or butter
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional fillings: yogurt, fresh berries, sliced bananas, nut butter, chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 12-cup muffin tin.
  2. In a large bowl, combine oats, chopped nuts, cinnamon, and salt.
  3. In a small saucepan, heat honey (or maple syrup), coconut oil, and brown sugar over low heat until melted and combined. Remove from heat and stir in vanilla extract.
  4. Pour the wet mixture over the dry ingredients and mix well until evenly coated.
  5. Divide the mixture evenly among the muffin cups. Press firmly into the bottom and up the sides to form a cup shape.
  6. Bake for 12–15 minutes or until golden brown. Let cool in the pan for 10 minutes, then carefully remove and cool completely on a wire rack.
  7. Once cooled, fill with your desired toppings such as yogurt and fruit just before serving.

Notes

  • Press the mixture firmly into the muffin tin to help it hold shape after baking.
  • Store unfilled granola cups in an airtight container for up to 1 week.
  • Try adding shredded coconut or mini chocolate chips for variety.
