Granola Cups are a fun and wholesome snack or breakfast idea made with baked granola shaped into muffin cups, perfect for filling with yogurt, fresh fruit, or nut butter.

- 2 cups old-fashioned rolled oats
- 1/2 cup chopped nuts (e.g., almonds, walnuts)
- 1/4 cup honey or maple syrup
- 1/4 cup melted coconut oil or butter
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Optional fillings: yogurt, fresh berries, sliced bananas, nut butter, chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 12-cup muffin tin.
- In a large bowl, combine oats, chopped nuts, cinnamon, and salt.
- In a small saucepan, heat honey (or maple syrup), coconut oil, and brown sugar over low heat until melted and combined. Remove from heat and stir in vanilla extract.
- Pour the wet mixture over the dry ingredients and mix well until evenly coated.
- Divide the mixture evenly among the muffin cups. Press firmly into the bottom and up the sides to form a cup shape.
- Bake for 12–15 minutes or until golden brown. Let cool in the pan for 10 minutes, then carefully remove and cool completely on a wire rack.
- Once cooled, fill with your desired toppings such as yogurt and fruit just before serving.
Notes
- Press the mixture firmly into the muffin tin to help it hold shape after baking.
- Store unfilled granola cups in an airtight container for up to 1 week.
- Try adding shredded coconut or mini chocolate chips for variety.
