Granadilla Fridge Tart is a classic South African no-bake dessert made with a creamy, tangy granadilla (passion fruit) filling layered over a biscuit crust. It’s refreshing, easy to prepare, and perfect for warm weather.

- 1 packet (200g) Tennis or digestive biscuits, crushed
- 1/2 cup (115g) unsalted butter, melted
- 1 can (385g) sweetened condensed milk
- 1 cup granadilla pulp (fresh or canned, with seeds)
- 1 cup heavy whipping cream
- 1 teaspoon lemon juice
Instructions
- Mix the crushed biscuits with melted butter until well combined. Press the mixture firmly into the base of a 9-inch pie dish or tart pan to form the crust. Place in the fridge to chill while preparing the filling.
- In a mixing bowl, whip the cream until soft peaks form.
- In another bowl, combine the condensed milk, granadilla pulp, and lemon juice. Gently fold in the whipped cream until the mixture is smooth and fluffy.
- Pour the filling over the chilled crust and smooth the top with a spatula.
- Refrigerate for at least 4 hours, preferably overnight, until the tart is fully set.
- Garnish with extra granadilla pulp or mint leaves before serving, if desired.
Notes
- Chill your mixing bowl and beaters beforehand for best whipped cream results.
- Use fresh granadilla pulp if available for brighter flavor and visual appeal.
- Store leftovers in the refrigerator for up to 3 days.
