Description

Granadilla Fridge Tart is a classic South African no-bake dessert made with a creamy, tangy granadilla (passion fruit) filling layered over a biscuit crust. It’s refreshing, easy to prepare, and perfect for warm weather.


Ingredients

  • 1 packet (200g) Tennis or digestive biscuits, crushed
  • 1/2 cup (115g) unsalted butter, melted
  • 1 can (385g) sweetened condensed milk
  • 1 cup granadilla pulp (fresh or canned, with seeds)
  • 1 cup heavy whipping cream
  • 1 teaspoon lemon juice

Instructions

  1. Mix the crushed biscuits with melted butter until well combined. Press the mixture firmly into the base of a 9-inch pie dish or tart pan to form the crust. Place in the fridge to chill while preparing the filling.
  2. In a mixing bowl, whip the cream until soft peaks form.
  3. In another bowl, combine the condensed milk, granadilla pulp, and lemon juice. Gently fold in the whipped cream until the mixture is smooth and fluffy.
  4. Pour the filling over the chilled crust and smooth the top with a spatula.
  5. Refrigerate for at least 4 hours, preferably overnight, until the tart is fully set.
  6. Garnish with extra granadilla pulp or mint leaves before serving, if desired.

Notes

  • Chill your mixing bowl and beaters beforehand for best whipped cream results.
  • Use fresh granadilla pulp if available for brighter flavor and visual appeal.
  • Store leftovers in the refrigerator for up to 3 days.
