Description

These soft, gooey, and ultra-chocolatey peanut butter cookie bars are a dream come true! They have a chewy cookie texture, a rich peanut butter flavor, and are loaded with melty chocolate chips. Perfect for any peanut butter lover!


Ingredients

  • 1/2 cup (115 g) unsalted butter, melted
  • 1/2 cup (120 g) creamy peanut butter 🥜
  • 3/4 cup (150 g) brown sugar
  • 1/4 cup (50 g) granulated sugar
  • 1 egg + 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 1/4 cups (160 g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup (180 g) chocolate chips 🍫 (semi-sweet or milk chocolate)
  • 1/2 cup (75 g) peanut butter chips (optional, for extra peanut butter flavor!)

Instructions

1. Preheat & Prepare

  1. Preheat oven to 350°F (175°C).
  2. Line a 9×9-inch baking pan with parchment paper, leaving an overhang for easy removal.

2. Make the Dough

  1. In a large bowl, whisk melted butter, peanut butter, brown sugar, and granulated sugar until smooth.
  2. Add egg, egg yolk, and vanilla extract, mixing until well combined.
  3. Stir in flour, baking powder, and salt, mixing just until combined.
  4. Fold in chocolate chips and peanut butter chips.

3. Bake the Bars

  1. Spread the batter evenly into the prepared pan.
  2. Bake for 20-25 minutes, or until the edges are set but the center is still slightly soft and gooey.
  3. Let cool in the pan for 15 minutes, then lift out using the parchment paper and cut into squares.

Notes

Extra gooey? Slightly underbake and let them set as they cool.
Crunchy twist? Add chopped peanuts or pretzels for extra texture.
Drizzle alert! Top with melted peanut butter or chocolate for even more decadence.
