For the Cake:
- 1 cup (225 g) unsalted butter
- 1 cup (200 g) granulated sugar
- 1/2 cup (100 g) brown sugar
- 1/2 cup (50 g) unsweetened cocoa powder
- 1 cup (240 ml) hot water or brewed coffee (enhances chocolate flavor)
- 2 large eggs
- 1/2 cup (120 ml) buttermilk (or milk + 1 tsp vinegar)
- 1 teaspoon vanilla extract
- 2 cups (250 g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (170 g) chocolate chips or chunks
For the Gooey Chocolate Topping:
- 1/2 cup (120 ml) heavy cream
- 1/2 cup (85 g) semi-sweet or dark chocolate chips
- 1 tablespoon butter
For Serving:
- Vanilla ice cream
- Whipped cream
- Powdered sugar
Instructions
1️⃣ Preheat & Prep
- Preheat oven to 350°F (175°C).
- Lightly grease a 10-12 inch cast iron skillet (or use a 9×13-inch baking dish).
2️⃣ Make the Cake Batter
- In a saucepan over medium heat, melt butter, cocoa powder, and hot water/coffee, stirring until smooth. Remove from heat.
- In a bowl, whisk sugar, brown sugar, flour, baking soda, and salt.
- Add butter mixture, eggs, buttermilk, and vanilla extract, mixing until smooth.
- Fold in chocolate chips for extra gooeyness.
3️⃣ Bake Until Fudgy
- Pour batter into the prepared skillet.
- Bake for 25-30 minutes, until the edges are set but the center is slightly soft.
4️⃣ Make the Gooey Topping
- Heat heavy cream until warm (not boiling).
- Pour over chocolate chips and butter, stirring until smooth.
- Drizzle over the warm cake.
5️⃣ Serve & Enjoy!
- Let cool for 5-10 minutes, then serve warm with ice cream!
