Ingredients

Scale

For the Mac and Cheese:

  • 1 lb (450 g) elbow macaroni or pasta of your choice
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 4 cups whole milk (warm)
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp Dijon mustard (optional)
  • 1/2 tsp smoked paprika (optional)
  • Salt and pepper to taste

For the Topping:

  • 1 cup breadcrumbs (panko or regular)
  • 2 tbsp unsalted butter, melted
  • 1/4 cup grated Parmesan cheese

Instructions

1. Cook the Pasta:

  1. Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente.
  2. Drain the pasta and set aside.

2. Make the Cheese Sauce:

  1. In a large saucepan, melt the butter over medium heat. Add the flour and whisk continuously for 1-2 minutes to create a roux (paste-like texture).
  2. Gradually add the warm milk, whisking constantly to avoid lumps. Continue cooking until the mixture thickens, about 5-7 minutes.
  3. Reduce the heat to low and stir in the cheddar, mozzarella, Parmesan, Dijon mustard, smoked paprika, salt, and pepper. Stir until the cheese is melted and the sauce is smooth.

3. Combine Pasta and Sauce:

  1. Add the cooked pasta to the cheese sauce and stir until the pasta is evenly coated.

4. Add the Topping:

  1. Preheat your oven to 375°F (190°C).
  2. Transfer the mac and cheese to a greased 9×13-inch baking dish.
  3. In a small bowl, mix the breadcrumbs, melted butter, and Parmesan cheese. Sprinkle evenly over the mac and cheese.

5. Bake:

  1. Bake for 20-25 minutes, or until the topping is golden brown and crispy.
  2. Let the mac and cheese cool for 5 minutes before serving.

Notes

  • Cheese Blend: Use your favorite cheeses for a personalized flavor, like Gruyère, Monterey Jack, or Colby.
  • Extra Creamy: Add a splash of heavy cream or extra cheese to the sauce for an ultra-creamy texture.
  • Make Ahead: Assemble the mac and cheese ahead of time, refrigerate, and bake just before serving. Add 5-10 minutes to the baking time if starting cold.
