Ingredients

Scale

For the Muffins:

  • 250 g (2 cups) all-purpose flour
  • 150 g (3/4 cup) granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 120 ml (1/2 cup) freshly squeezed orange juice
  • 120 ml (1/2 cup) milk
  • 100 g (1/2 cup) unsalted butter, melted
  • 1 tablespoon orange zest (from 12 oranges)
  • 1 teaspoon vanilla extract

For the Orange Glaze:

  • 100 g (3/4 cup) powdered sugar
  • 23 tablespoons freshly squeezed orange juice
  • 1 teaspoon orange zest (optional)

Instructions

🧁 Preparing the Muffins:

  1. Preheat the Oven:

    • Preheat your oven to 180°C (350°F).
    • Line a 12-cup muffin tin with paper liners or lightly grease it.
  2. Mix the Dry Ingredients:

    • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Combine the Wet Ingredients:

    • In a separate bowl, whisk together the eggs, orange juice, milk, melted butter, orange zest, and vanilla extract until smooth.
  4. Combine Wet and Dry:

    • Pour the wet ingredients into the dry ingredients.
    • Mix gently until just combined. Do not overmix; the batter should be slightly lumpy.
  5. Fill the Muffin Cups:

    • Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  6. Bake:

    • Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
    • Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

🍊 Preparing the Orange Glaze:

  1. Mix the Glaze:

    • In a small bowl, combine the powdered sugar, orange juice, and orange zest.
    • Whisk until smooth and slightly thick but pourable. Add more orange juice if needed to adjust the consistency.
  2. Glaze the Muffins:

    • Once the muffins are completely cooled, drizzle the glaze over the top using a spoon or dip the tops of the muffins into the glaze for a more even coating.
  3. Set the Glaze:

    • Allow the glaze to set for a few minutes before serving.

🍽️ Serving Suggestions:

  • Enjoy with a cup of coffee or tea for a delightful breakfast.
  • Sprinkle with a bit of extra orange zest for a fresh citrusy aroma.

Notes

  • For a more intense orange flavor, you can add a teaspoon of orange extract to the batter.
  • These muffins keep well in an airtight container at room temperature for 2-3 days, or they can be frozen for up to 2 months.
