Description

  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon lemon zest

Instructions

  1. Preheat & Prep: Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
  2. Mix Wet Ingredients: In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Add the eggs, lemon zest, lemon juice, and vanilla extract. Whisk until fully combined.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, salt, and poppy seeds.
  4. Make the Batter: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
  5. Bake: Pour the batter into the prepared pan and spread evenly. Bake for 22-28 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool: Let the bars cool completely in the pan before adding the glaze.
  7. Prepare the Glaze: In a small bowl, whisk together powdered sugar, lemon juice, vanilla extract, and lemon zest until smooth.
  8. Glaze the Bars: Drizzle or spread the glaze over the cooled bars. Let it set for about 15 minutes before slicing.
