For the Bars:

- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 tablespoon lemon zest (from about 2 lemons)

- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 tablespoons poppy seeds
For the Glaze:
- 1 cup powdered sugar
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon vanilla extract
- 1 teaspoon lemon zest
Instructions
- Preheat & Prep: Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
- Mix Wet Ingredients: In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Add the eggs, lemon zest, lemon juice, and vanilla extract. Whisk until fully combined.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, salt, and poppy seeds.
- Make the Batter: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
- Bake: Pour the batter into the prepared pan and spread evenly. Bake for 22-28 minutes, or until a toothpick inserted in the center comes out clean.
- Cool: Let the bars cool completely in the pan before adding the glaze.
- Prepare the Glaze: In a small bowl, whisk together powdered sugar, lemon juice, vanilla extract, and lemon zest until smooth.
- Glaze the Bars: Drizzle or spread the glaze over the cooled bars. Let it set for about 15 minutes before slicing.
