Description

Gingerbread Men Pancakes are a festive and fun holiday breakfast treat, flavored with warm spices like ginger, cinnamon, and nutmeg. Shaped like classic gingerbread cookies, they’re perfect for kids and cozy mornings.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1 cup buttermilk
  • 1 egg
  • 2 tablespoons molasses
  • 2 tablespoons melted butter
  • Butter or oil for greasing pan
  • Optional: whipped cream, syrup, berries, or icing for decorating

Instructions

  1. In a large bowl, whisk together flour, brown sugar, baking powder, baking soda, salt, and spices.
  2. In another bowl, mix buttermilk, egg, molasses, and melted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat a nonstick skillet or griddle over medium heat and lightly grease.
  5. Pour batter into a gingerbread man-shaped mold or carefully shape using a squeeze bottle or spoon.
  6. Cook 2–3 minutes until bubbles form on the surface, then flip and cook another 1–2 minutes until cooked through.
  7. Serve warm with your choice of toppings and decorations.

Notes

  • If you don’t have a mold, use a squeeze bottle to outline and fill the shape.
  • Add mini chocolate chips or icing for a cookie-inspired look.
  • Can be made ahead and frozen for holiday mornings.
