- 2 tablespoons brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon

- 1/4 teaspoon ground nutmeg
- 1 cup buttermilk
- 1 egg
- 2 tablespoons molasses
- 2 tablespoons melted butter
- Butter or oil for greasing pan
- Optional: whipped cream, syrup, berries, or icing for decorating
Instructions
- In a large bowl, whisk together flour, brown sugar, baking powder, baking soda, salt, and spices.
- In another bowl, mix buttermilk, egg, molasses, and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Heat a nonstick skillet or griddle over medium heat and lightly grease.
- Pour batter into a gingerbread man-shaped mold or carefully shape using a squeeze bottle or spoon.
- Cook 2–3 minutes until bubbles form on the surface, then flip and cook another 1–2 minutes until cooked through.
- Serve warm with your choice of toppings and decorations.
Notes
- If you don’t have a mold, use a squeeze bottle to outline and fill the shape.
- Add mini chocolate chips or icing for a cookie-inspired look.
- Can be made ahead and frozen for holiday mornings.
