- 4 large eggs
- 1/2 cup milk

Instructions
- In a large mixing bowl, whisk together flour, salt, and nutmeg.
- Add eggs and milk, and mix until a smooth, thick batter forms. Let rest for 10-15 minutes.
- Bring a large pot of salted water to a boil.
- Using a spaetzle maker, colander with large holes, or cutting board and knife, press or cut batter into boiling water in small batches.
- Cook until dumplings float to the top, about 2-3 minutes. Remove with a slotted spoon and transfer to a colander to drain.
- If desired, melt butter in a large skillet and sauté spaetzle until lightly browned.
- Garnish with chopped parsley and serve hot as a side or main dish.
Notes
- Letting the batter rest helps develop better texture.
- Pan-frying the cooked spaetzle adds a delicious crisp edge.
- Serve alongside roasted meats, stews, or with gravy and cheese.
