- 2 medium eggplants, sliced into 1/2-inch rounds
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1/3 cup grated Parmesan cheese
- 1 tsp dried Italian seasoning
- Salt and black pepper, to taste
- 2 tbsp chopped fresh parsley (optional garnish)
Instructions
- Preheat grill to medium-high heat and lightly oil the grates.
- In a small bowl, mix olive oil, minced garlic, Italian seasoning, salt, and pepper.
- Brush both sides of the eggplant slices with the garlic oil mixture.
- Grill eggplant slices for 4–5 minutes per side, or until tender and grill marks appear.
- Sprinkle grated Parmesan over the eggplant during the last minute of grilling to melt slightly.
- Remove from grill and garnish with chopped parsley before serving.
Notes
- Salting the eggplant slices and letting them sit for 15–20 minutes helps reduce bitterness.
- Use freshly grated Parmesan for best flavor.
- Serve as a side dish or over pasta or salad for a light meal.
