This flavorful grilled chicken is marinated in a garlicky, herby olive oil blend, then finished with a shower of melted Parmesan and fresh parsley. It’s simple, packed with flavor, and perfect for summer grilling or easy meal prep.
Ingredients
For the Marinade:

1/4 cup olive oil

2 tbsp lemon juice

1 tbsp honey (optional, for balance)

4 garlic cloves, minced

1 tsp Italian seasoning

1/2 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1/4 cup grated Parmesan cheese
For the Chicken:

1 1/2 to 2 lbs boneless, skinless chicken breasts or thighs

Chopped fresh parsley, for garnish
Instructions

Marinate the chicken:
In a bowl, whisk together olive oil, lemon juice, honey, garlic, seasonings, and Parmesan. Add chicken and toss to coat. Cover and marinate for at least 30 minutes (up to 4 hours for max flavor). -
Preheat grill:
Heat grill to medium-high. Oil grates lightly to prevent sticking. -
Grill the chicken:
Remove chicken from marinade, letting excess drip off. Grill 5–7 minutes per side, or until internal temperature reaches 165°F (75°C) and juices run clear. -
Finish with cheese:
In the last 1–2 minutes of grilling, sprinkle more Parmesan over the top to let it melt slightly. -
Serve:
Remove from grill, rest for 5 minutes. Garnish with fresh parsley and extra cheese if desired.
