Ingredients
- 1.5 lbs (700 g) chicken breast or thighs, cut into bite-sized pieces
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup (50 g) grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (for garnish)
Optional:
- Wooden skewers (soaked in water for 30 minutes if grilling)
Instructions
-
Prepare the Marinade:
In a large bowl, mix olive oil, minced garlic, Italian seasoning, paprika, salt, and pepper. Add the chicken pieces to the bowl and toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes or up to 4 hours. -
Preheat and Assemble Skewers:
If grilling, preheat the grill to medium-high heat. If baking, preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Thread the marinated chicken pieces onto skewers. -
Coat with Parmesan:
Place the grated Parmesan on a large plate. Roll each skewer in the Parmesan cheese to coat the chicken pieces. -
Cook the Skewers:
- Grilling: Place the skewers on the grill and cook for 8–10 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Baking: Place the skewers on the prepared baking sheet and bake for 15–18 minutes, flipping halfway through, until the chicken is fully cooked. For a crispy finish, broil for 2–3 minutes.
-
Garnish and Serve:
Remove the skewers from the heat and sprinkle with chopped parsley. Serve hot with a side of garlic dipping sauce, a fresh salad, or your favorite starch.
Notes
- For added flavor, you can mix some breadcrumbs with the Parmesan for extra crunch.
- This recipe works equally well with other proteins like shrimp or tofu.
- Serve with a side of marinara sauce or garlic butter for dipping.
