    • 1/4 cup neutral oil (like vegetable or canola oil)
    • 6 cloves garlic, minced
    • 12 tbsp chili flakes (adjust to taste)
    • 2 tbsp soy sauce
    • 1 tbsp rice vinegar
    • 1 tbsp sesame oil
    • 1 tsp sugar
    • 1/4 tsp salt
    • 1/4 tsp ground Sichuan pepper (optional, for extra heat)

Instructions

  1. Cook the Noodles:
    • Cook the noodles according to package instructions until tender. Drain and set aside.
  2. Prepare the Garlic Chili Oil Sauce:
    • In a small saucepan, heat the neutral oil over medium heat until hot but not smoking.
    • Add the minced garlic and chili flakes, and sauté for 1-2 minutes, until the garlic is golden and fragrant. Remove from heat.
    • Stir in soy sauce, rice vinegar, sesame oil, sugar, salt, and Sichuan pepper (if using) to complete the sauce.
  3. Combine the Noodles and Sauce:
    • Place the cooked noodles in a large bowl. Pour the garlic chili oil sauce over the noodles and toss to coat evenly.
  4. Garnish and Serve:
    • Top with green onions, cilantro, and sesame seeds for garnish.
    • Serve immediately and enjoy the noodles warm!
