Description

Garlic Chicken Gnocchi Skillet is a cozy, one-pan meal featuring tender chicken, pillowy gnocchi, and a creamy garlic-parmesan sauce. Perfect for a quick and satisfying weeknight dinner.


Ingredients

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1 package (16 oz) potato gnocchi
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup baby spinach (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until golden and cooked through. Remove and set aside.
  2. In the same skillet, melt butter. Add garlic and sauté for 1 minute until fragrant.
  3. Add gnocchi and stir to coat. Cook for 2-3 minutes until lightly golden.
  4. Pour in chicken broth and cream, stirring well. Bring to a simmer and cook for 5-6 minutes, until gnocchi is tender and sauce thickens.
  5. Stir in Parmesan cheese and Italian seasoning. Return chicken to the skillet and mix to combine.
  6. If using, add spinach and cook until wilted.
  7. Garnish with chopped parsley and serve hot.

  • Use pre-cooked rotisserie chicken for a shortcut.
  • Add mushrooms or sun-dried tomatoes for extra flavor.
  • Use half-and-half instead of heavy cream for a lighter version.
