- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 tablespoon butter
- 3 cloves garlic, minced
- 1 package (16 oz) potato gnocchi
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup baby spinach (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until golden and cooked through. Remove and set aside.
- In the same skillet, melt butter. Add garlic and sauté for 1 minute until fragrant.
- Add gnocchi and stir to coat. Cook for 2-3 minutes until lightly golden.
- Pour in chicken broth and cream, stirring well. Bring to a simmer and cook for 5-6 minutes, until gnocchi is tender and sauce thickens.
- Stir in Parmesan cheese and Italian seasoning. Return chicken to the skillet and mix to combine.
- If using, add spinach and cook until wilted.
- Garnish with chopped parsley and serve hot.

- Use pre-cooked rotisserie chicken for a shortcut.
- Add mushrooms or sun-dried tomatoes for extra flavor.
- Use half-and-half instead of heavy cream for a lighter version.
