Description

This simple garlic butter spaghetti is full of flavor and comes together in under 30 minutes. Tossed in a rich butter sauce with plenty of garlic and fresh herbs, it makes a perfect weeknight dinner or side dish. You can enjoy it on its own or pair it with grilled chicken or shrimp.

Ingredients

  • 8 oz spaghetti

  • 4 tablespoons unsalted butter

  • 6 cloves garlic, minced

  • 1/2 teaspoon red pepper flakes (optional)

  • 1/4 cup chopped fresh parsley

  • 1 tablespoon chopped fresh basil (or 1 teaspoon dried basil)

  • Salt, to taste

  • Freshly ground black pepper, to taste

  • 1/2 cup grated Parmesan cheese (optional)

  • Juice of 1/2 lemon (optional)

Instructions

  1. Cook spaghetti in a large pot of salted boiling water according to package directions until al dente. Reserve ½ cup of pasta water, then drain the rest.

  2. In a large skillet over medium heat, melt the butter.

  3. Add the minced garlic and red pepper flakes (if using) and sauté for 1–2 minutes, until fragrant.

  4. Add the cooked spaghetti to the skillet and toss to coat in the garlic butter sauce.

  5. Stir in the reserved pasta water a little at a time until the sauce reaches your desired consistency.

  6. Mix in the chopped parsley, basil, salt, and black pepper.

  7. Remove from heat and top with grated Parmesan cheese and a squeeze of lemon juice, if desired.

  8. Serve immediately.

Notes

  • This dish can be made vegan by using plant-based butter and skipping the Parmesan.

  • Add grilled chicken, shrimp, or sautéed mushrooms for a heartier meal.

  • For more richness, stir in a splash of heavy cream or olive oil.
