For the Shrimp Scampi:

  • 450 g (1 lb) shrimp (peeled, deveined, tails off)
  • 3 tbsp butter (divided)
  • 4 cloves garlic (minced)
  • 1/2 tsp red pepper flakes (optional, for heat)
  • 1/2 cup white wine (or chicken broth for non-alcoholic version)
  • Juice of 1 lemon
  • Salt & pepper to taste
  • 2 tbsp chopped fresh parsley

For the Creamy White Sauce:

  • 3 tbsp butter
  • 3 tbsp flour
  • 2 1/2 cups whole milk (or half-and-half for extra richness)
  • 1/2 cup heavy cream (optional, for ultra-creamy texture)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1/2 cup grated Parmesan cheese

For the Lasagna Layers:

  • 12 lasagna noodles (cooked according to package instructions)
  • 2 cups ricotta cheese
  • 1 egg
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp chopped parsley (for garnish)

Instructions

Step 1: Prepare the Shrimp Scampi

  1. In a large skillet over medium heat, melt 2 tbsp butter.
  2. Add the garlic and red pepper flakes, sauté for 30 seconds until fragrant.
  3. Add the shrimp, season with salt and pepper, and cook for 2-3 minutes per side until pink.
  4. Pour in the white wine and lemon juice, stirring to deglaze the pan. Let simmer for 2 minutes.
  5. Remove the shrimp and set aside. Reserve the liquid.

Step 2: Make the Creamy White Sauce

  1. In the same skillet, melt 3 tbsp butter over medium heat.
  2. Whisk in the flour and cook for 1 minute, stirring constantly.
  3. Slowly whisk in the milk and heavy cream, stirring until thickened (about 3-4 minutes).
  4. Add the reserved shrimp scampi liquid, salt, pepper, Italian seasoning, and Parmesan cheese.
  5. Stir well, then remove from heat.

Step 3: Prepare the Ricotta Mixture

  1. In a bowl, mix ricotta cheese, egg, and a pinch of salt & pepper until combined.

Step 4: Assemble the Lasagna

  1. Preheat oven to 375°F (190°C).
  2. Spread a thin layer of white sauce on the bottom of a 9×13-inch baking dish.
  3. Layer 3 lasagna noodles, followed by ricotta mixture, shrimp, mozzarella, and white sauce.
  4. Repeat layers until all ingredients are used, finishing with noodles, sauce, and cheese on top.
  5. Sprinkle with extra Parmesan cheese.

Step 5: Bake & Serve

  1. Cover with foil and bake for 25 minutes.
  2. Remove foil and bake for 15 more minutes until golden and bubbly.
  3. Let rest 10 minutes before slicing. Garnish with fresh parsley.
