For the Shrimp Scampi:
- 450 g (1 lb) shrimp (peeled, deveined, tails off)
- 3 tbsp butter (divided)
- 4 cloves garlic (minced)
- 1/2 tsp red pepper flakes (optional, for heat)
- 1/2 cup white wine (or chicken broth for non-alcoholic version)
- Juice of 1 lemon
- Salt & pepper to taste
- 2 tbsp chopped fresh parsley
For the Creamy White Sauce:
- 3 tbsp butter
- 3 tbsp flour
- 2 1/2 cups whole milk (or half-and-half for extra richness)
- 1/2 cup heavy cream (optional, for ultra-creamy texture)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp Italian seasoning
- 1/2 cup grated Parmesan cheese
For the Lasagna Layers:
- 12 lasagna noodles (cooked according to package instructions)
- 2 cups ricotta cheese
- 1 egg
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tbsp chopped parsley (for garnish)
Instructions
Step 1: Prepare the Shrimp Scampi
- In a large skillet over medium heat, melt 2 tbsp butter.
- Add the garlic and red pepper flakes, sauté for 30 seconds until fragrant.
- Add the shrimp, season with salt and pepper, and cook for 2-3 minutes per side until pink.
- Pour in the white wine and lemon juice, stirring to deglaze the pan. Let simmer for 2 minutes.
- Remove the shrimp and set aside. Reserve the liquid.
Step 2: Make the Creamy White Sauce
- In the same skillet, melt 3 tbsp butter over medium heat.
- Whisk in the flour and cook for 1 minute, stirring constantly.
- Slowly whisk in the milk and heavy cream, stirring until thickened (about 3-4 minutes).
- Add the reserved shrimp scampi liquid, salt, pepper, Italian seasoning, and Parmesan cheese.
- Stir well, then remove from heat.
Step 3: Prepare the Ricotta Mixture
- In a bowl, mix ricotta cheese, egg, and a pinch of salt & pepper until combined.
Step 4: Assemble the Lasagna
- Preheat oven to 375°F (190°C).
- Spread a thin layer of white sauce on the bottom of a 9×13-inch baking dish.
- Layer 3 lasagna noodles, followed by ricotta mixture, shrimp, mozzarella, and white sauce.
- Repeat layers until all ingredients are used, finishing with noodles, sauce, and cheese on top.
- Sprinkle with extra Parmesan cheese.
Step 5: Bake & Serve
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for 15 more minutes until golden and bubbly.
- Let rest 10 minutes before slicing. Garnish with fresh parsley.
