- 12 oz pasta (penne or fettuccine)
- 1 tbsp olive oil
- 14 oz smoked sausage, sliced
- 4 tbsp unsalted butter
- 6 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional)
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper, to taste
- 1/4 cup pasta water (reserved)
Instructions
- Cook the pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water, then drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned, about 5–7 minutes. Remove and set aside.
- In the same skillet, melt the butter. Add minced garlic and red pepper flakes (if using), and sauté for 1–2 minutes until fragrant.
- Return the sausage to the skillet and mix with the garlic butter sauce.
- Add the cooked pasta to the skillet along with the reserved pasta water. Toss everything to combine well.
- Stir in the grated Parmesan cheese and chopped parsley. Season with salt and pepper to taste.
- Serve hot, garnished with additional parsley or cheese if desired.
Notes
- Use any type of smoked sausage like kielbasa or andouille for a flavor variation.
- For a creamy version, stir in 1/4 cup of heavy cream before adding cheese.
- This dish can be made ahead and reheated easily.
