Description

A rich and savory pasta dish featuring smoky sausage, tender pasta, and a flavorful garlic butter sauce for a comforting and quick meal.


Ingredients

  • 12 oz pasta (penne or fettuccine)
  • 1 tbsp olive oil
  • 14 oz smoked sausage, sliced
  • 4 tbsp unsalted butter
  • 6 cloves garlic, minced
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper, to taste
  • 1/4 cup pasta water (reserved)

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water, then drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned, about 5–7 minutes. Remove and set aside.
  3. In the same skillet, melt the butter. Add minced garlic and red pepper flakes (if using), and sauté for 1–2 minutes until fragrant.
  4. Return the sausage to the skillet and mix with the garlic butter sauce.
  5. Add the cooked pasta to the skillet along with the reserved pasta water. Toss everything to combine well.
  6. Stir in the grated Parmesan cheese and chopped parsley. Season with salt and pepper to taste.
  7. Serve hot, garnished with additional parsley or cheese if desired.

Notes

  • Use any type of smoked sausage like kielbasa or andouille for a flavor variation.
  • For a creamy version, stir in 1/4 cup of heavy cream before adding cheese.
  • This dish can be made ahead and reheated easily.
